Spicy Rice
This goes well with any meal. Been about two years since I’ve made it, but I’ll bet it’s still good. Recipe from Lena Crayman.
Ingredients:
- 2 cups Chicken Stock
- 1/2 cup minced green onion
- 1/2 cup minced parsley
- 1/2 stick butter
- 1 cup of rice
- 1/2 teaspoon salt
- 1 minced garlic clove
- 1/8 teaspoon cayenne
- 1/8 teaspoon ground black pepper
- 1 bay leaf
- 1/2 teaspoon Chesapeake seasoning.
Directions:
- Blend stock, onion, and parsley in a blender on high for a minute or so.
- Melt the butter in a saucepan and stir in rice. Cook for 1 minute over low heat.
- Stir in salt, garlic, cayenne, pepper, stock mix, Chesapeake seasoning, and bay leaf.
- Bring to a boil, stir, cover, lower heat and let it cook for 15 mintues.
- Fluff the rice, let it sit for 5 minutes. Serves about 4.
