Spicy Rice

This goes well with any meal. Been about two years since I’ve made it, but I’ll bet it’s still good. Recipe from Lena Crayman.
Ingredients:

  • 2 cups Chicken Stock
  • 1/2 cup minced green onion
  • 1/2 cup minced parsley
  • 1/2 stick butter
  • 1 cup of rice
  • 1/2 teaspoon salt
  • 1 minced garlic clove
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon ground black pepper
  • 1 bay leaf
  • 1/2 teaspoon Chesapeake seasoning.

Directions:

  1. Blend stock, onion, and parsley in a blender on high for a minute or so.
  2. Melt the butter in a saucepan and stir in rice. Cook for 1 minute over low heat.
  3. Stir in salt, garlic, cayenne, pepper, stock mix, Chesapeake seasoning, and bay leaf.
  4. Bring to a boil, stir, cover, lower heat and let it cook for 15 mintues.
  5. Fluff the rice, let it sit for 5 minutes. Serves about 4.
