Savory Macaroni

Another favorite at the firehouse.  From a long time local resident, Louise Robey.  Serves ~ 6.

Ingredients:

  • 2 cups elbow macaroni (uncooked)
  • 1/2 cup onion, chopped
  • 1/2 cup green pepper, chopped
  • 1 clove garlic
  • 1/2 cup cooking oil
  • 1 lb. ground beef
  • 3 cups tomato juice
  • 4 pinches salt
  • 2 pinches black pepper
  • 2 tbsp. worcestershire sauce

Directions:

  1. Add macaroni, onion, peppers, garlic and cooking oil to a pan/pot and saute w/ low heat for about 10 minutes.  Stir occasionally, don’t let it stick.
  2. Add the beef and cook until meat is brown.  Stir throughly.
  3. Add tomato juice and rest of ingredients.  Stir, and bring to a boil with high heat.  Cover it, reduce the heat to low, and let it cook for 25-30 minutes. Do not stir.
