Chicken Paprikash

Serve this over buttered noodles.  Very good with a rosy wine and a light salad.

Ingredients:

  • 1.5 lbs of boneless chicken
  • 2 tablespoons paprika
  • 2 tablespoons butter
  • 1.5 cups chopped onion
  • 2 teaspoons garlic (or two cloves, minced)
  • 1.5 cups of Muir Glen tomato basil sauce
  • 0.5 cup chicken broth
  • 0.5 cup sour cream
  • salt
  • pepper

Directions:

  1. Mix the chicken with half the paprika and some salt/pepper.
  2. Heat half the butter in a skillet over med-high heat.  Add the chicken and brown, about 5 minutes.
  3. Take the chicken out and set aside on a plate, cover if you want with foil.
  4. Add the rest of the butter, onions, and cook till golden, 3-4 minutes.
  5. Add the garlic, rest of paprika, and cook for a minute.
  6. Add the sauce and broth. Reduce the heat to medium and cook for 5-8 minutes, or until thickened.
  7. Add the sour cream, then add the chicken back and cook for about 5 minutes, or until the chicken is done.
